The Wholesomeness of Irradiated Food

چکیده

As-may have been mentioned by previous speaker?,'the basic process of food irradiation does not differ in the physical sense from any other food processing techniques which involve the application of radiation energy to food. Thus ordinary or microwave cooking uses longer wavelength radiation while food irradiation employs the shorter wavelength of gamma irradiation produced by Co or Cs or by electron beams. The energy level used in food irradiation is too low ever to lead to any production of radioactivity in the irradiated food, hence wholesomeness considerations can totally exclude this aspect. The uniqueness of food irradiation rests inherently on the particular type of energy employed and has aroused special attention because of this fact.

This report presents the recommendations of an international group of experts convened by the World Health Organization, in association with the Food and Agriculture Organization of the United Nations and the International Atomic Energy Agency to consider the implications of food irradiated to doses higher than those recommended in 1980 by the Joint Expert Committee on the Wholesomeness of Irra...

Growth, reproduction, mortality, and pathologic changes in rats fed gamma-irradiated potatoes.

The use of ionizing radiation to arrest sprout development in tubers and thereby prolong their storage life has been reported by Sparrow and Christensen (1954), Brownell et al. (1954, 1957)) and others. Since only about 7-15 kilorads are required to achieve this, many of the problems involved in the sterilization of foods by radiation, which require doses of 4000 kilorads or more, are avoided. ...

ground beef. This summary briefly addresses the remaining questions about food irradiation. In addition, it provides a useful summary of the regulatory history and the current state of scientific knowledge of the technology as applied to food. Federal regulators, food scientists, food processors, and consumers will write the next chapter in the story of irradiation. New challenges awaiting reso...

Preservation of food items by irradiation process

Two types of radiations are used for preservation. They are ionizing radiations such as cathode and gamma rays and nonionizing radiation such as infrared and UV rays. The latter two have poor penetration and bactericidal properties. Ionizing radiations act by disrupting progeny cycles of pathogenic microorganisms by destroying DNA/RNA cycles. Thus, it enhances shelf-life of food and reduces mic...
